Feeling Like Stew

My wonderful neighbor Kayla, invited me to dinner a few weeks back because she knew that I have been through so much in the last few months and that I was a little down and out. Well she made this delicious stew and gave me the recipe which is so simple. I thought I would share it with you.

In a large, deep skillet, saute onion quarters in olive oil until slightly tender. Then pour in chicken broth and add whole new potatoes, baby carrots, fresh Rosemary & McCormick's Montreal Seasoning for Chicken (or your favorite chicken seasoning). Bring to a boil then add cooked deboned chicken, reduce heat and simmer until the vegetables are tender. It is so good. I can't wait to make it again. Hope you enjoy it too.

That stew looks delicious. I love comfort food. I'd like to dig into a bowl of this stew right now, with crusty buttered bread to mop up the broth. Yum.

Sorry to hear you've been a little down. I hope the comfort food was a nice lift!

Now this is a good one to try since we have had real "soup weather" around here lately. Must try!
