Sweet n Sour Carrots

Sweet-N-Sour Carrots
2 pounds of baby carrots
1 can of pineapple cubes with juice
1/2 cup of pineapple juice
1/2 red or orange bellpepper, diced
1 green bellpepper, diced
1/2 stick of butter
1/4 cup of brown sugar
1 tsp of Soy Sauce

Cook carrots until tender but not mushy. Drain. Add all the remaining ingredients, bring to a boil, reduce heat and simmer for 30 mintes or until the bellpeppers are crisp tender.
